Fresh Spinach Salad

1 bag of fresh spinach leaves (washed)
1 Large Red onion sliced in thin rings
Fresh mushrooms, washed and sliced as desired

Dressing:
1 cup of oil
1/2 cup white vinegar
1/2 cup sugar
Salt
1/4 tsp. dry mustard
1 tsp. onion juice
1/2 tsp. worchestershire
1/4 cup toasted sesame seeds.
(toast on a cookie sheet in the oven until brown)
Toss dressing ingredients in a jar with lid, then pour over salad
(Croutons and/or hard-boiled eggs can be added on the top)

Grandma's Soup

Small chuck roast with bone
Large bag of mixed frozen vegetables
Large can of tomato puree
Bag of Egg noodles

Cook the roast in water in a large stock pot until done. Add the can of puree.
About 45 minutes before serving, put in the bag of frozen vegetables and egg noodles. Bring to a boil. Turn down the heat and serve or keep on low until ready to eat. icon_razz


Dorothyism's

Since talking to my mom about this site, I decided to add some words of wisdom from
her on occasion. Just the way she said things sometimes was hilarious. Someday it
will be in my book about living with mom while she made all these fabulous meals and
life as a homemaker in general.

Today's Dorothyism

REDD UP THIS HOUSE

(meaning "clean up this junk".

P.S. according to her, the word redd is in the dictionary


Fruit 'N Pasta (a delicious fruit salad dish)

Ingedients:

1 medium size can chunk pineapple ( save the juice)
1 small can mandarin oranges (save juice)
1 medium jar maraschino cherries (using 1/2 jar - just the cherries)
1/2 box orzo macaroni (like rice)
1/2 cup sugar
1 egg
1 tablespoon flour
1 med. size cool whip (lite) 16 oz.

COMBINE:
Sugar, egg & flour , and all juice. Mix altogether in a pan cook slowly on top of stove until thick and cool.
Cook orzo and drain.
When cool mix with the fruit and fold in cool whip.
Chill


Oven Stew

2 lbs. Beef Stew meat (chunks)
1 onion - Quartered
4 carrots, pared & halved or chunked
4 celery stalks - chunky
1 green pepper chopped
1/4 cup Quick Tapioca
1/2 cup dry bread crumbs
2 cups mushrooms (or 1/2 lb. fresh) cleaned and chunky
1 tsp salt.
1 cup dry Red Wine
1 can - (lb 12 oz) large undrained tomatoes

Combine all ingredients in a large dutch oven. Cook covered at 350 degrees for
2 hours. Do not open

(or you can cook at 325 degrees - 2 1/2 hrs. or 300 for 4 hours)


Spring Fever Baked Beans

In a glass baking dish or casserole combine:
3-4 Medium size cans of pork and beans or 2 large cans
About: (more or less)
1 cup Ketchup
1 cup Brown sugar
1 onion cut up
1/2 green pepper
4 bacon strips (lay on top)
Bake at 350 degrees for about an hour or less

Barley Soup

(I am trying to preserve my mother's (Dorothy) classic recipes. This one is more recent.

First Brown & Drain
1 lb. ground beef
1 onion
1 garlic

Transfer to a large stock pot and
Add:

1 can Beef Broth
5-6 cans of water
1/2 large can tomato puree
1/2 cup barley
2 celery stocks & 2 carrots cut up
Cabbage leaves (washed and torn up)
1/2 tsp. basil
1 Bay leaf

Cook on low - 1 hour
then; ADD
9 to 16 oz. bag frozen vegetables
1/4 cup small noodles (alphabets or stars)

Pork, Chicken, Seafood, lobster, brie, quiche (also for real men) Alfredo dishes - Sauvignon Blanc, Chardonnay, White Burgundy

French Food, leg of lamb, ham, turkey - Pinot Noir (a/k/a Pinot) Beaujolais, Red Burgundy

Mexican, Stew, Roast Beef - Zinfandel (yes there is a clique out there) Syrah/Shiraz

World's Best Smoothie (with alcohol)

Small pint of Haagan Dazs Rum Raisin Ice Cream
Kahlua

Mix one or two shots of Kahlua
with
Enough Rum Raisin Ice Cream to fill 8 oz. glass

blend with a hand blender

Happy Pistachio Day

My original pistachio pie recipe:

Crush one section (from the box) of graham crackers with butter to make crust
spread in bottom of aluminum pie tin
ON THE STOVE:
Make one package of COOKED chocolate pudding according to instructions
pour into pie shell
Mix one package INSTANT pistachio pudding with
1 container of Cool Whip

After chocolate pudding slightly sets add the cool whip pistachio mix to the top.
Regrigerate at least 3 hours before serving


Easy Light Clam Chowder

What I like to use is:

1 can of minced clams with juice
1 envelope creamy vegetable soup mix (Knorrs)
1 large can of clam chowder ready made soup (Progesso or brand of choice) I use low-fat
About a quart of milk (I use low fat)
A can of smoked oysters (this is my choice but not necessary)
cubed potatoes if desired

Cook all in a crockpot on low for an 1 and a half up to 2 hours.

This soup is very creamy and tastes homemade and a lot easier.


Wedding ideas are unlimited

I recently saw on television a new theme for weddings is cocktail rounds with appetizers for the reception. It says people are enjoying this format and find it very comfortable to socialize. You can use some yummy finger foods, serve some exotic drinks and add a couple stations.I thought this was unique. Anyone willing to try it? icon_wink Image
